Pilzwoche auf Tyskegård

Do you want a week of nature, peace and good food?


From September 26 to October 3, 2021, we are offering a mushroom week at Tyskegård, Bornholm, as part of the farm calendar. During this week we will make extensive autumn tours through the most beautiful forests of the island and go hunting for porcini mushrooms, brown caps and brown chestnuts. You learn something about the Fruits of the Herbs, Mother Nature, and the Preparation and Conservation of the Gifts of the Forest. A real must for nature and mushroom lovers.


Program:

Sunday, 26.09. : Individual arrival by 6 p.m., overview of the week and introduction to mushroom identification. What is edible? What is inedible? How do we proceed? Followed by dinner together in the Orangery.

Monday, 27.09. : Take 1 in the forrest. Autumn forest. There is a rustling in the wood. The ground and moss spring under light footsteps. Pick that mushroom. A colorful leaf falls, branches break. Quiet, quiet, quiet. The mist glistens dully with dew. High above us, a cry to the south, the wanderlust of the geese. Sponges graze in the grass and now and then a deer.


First evening at the stove.

The basket exudes an earthy fragrance – the picture carousel refuses to stand still. By the stove – laughter and clinking glasses. The catch is sorted into grog and wine. In the glow of the fire, we celebrate the best pieces, while chopped, cut, marinated, dried, salted, the abundance in the preserving jar can unfold its aroma from time to time. Heart and soul boil over until the eyes rest, deep in the embers.

Tuesday, 28.09 .: At your leisure. On request, tips for beautiful autumn tours and selected restaurants.


Mittwoch, 29.09 .: Day 2 in the forrest.

A picture of tomorrow: cracks and furrows between rock and earth allow sponges to spread their invisible web. Red and brown caps, stone and birch mushrooms, puffballs, chanterelles, and giant puffballs lead the way. Under a linen tarpaulin, surrounded by drizzling wetness, an autumnal pan steams and billows in a tight center. And now and then, a heart leap announces itself.

In the evening, inspection of the “booty” and further study of mushroom lore. And then: smoking the Christmas ham and duck breasts in the clay oven. Wine tasting, fire in the oven, meaningful chatter.


Thursday, 30.09. : At your leisure. On request, the three most beautiful coastal and beach tours on the island.

Friday, 01.10. : Day at the oven.


The fire burned. Crackling and popping, it ate its way through more and more logs. While one of the first autumn storms raged outside, causing white caps to dance on the sea, we kept warm by kneading and baking. Delicious breads, autumnal cakes, and the occasional focaccia to snack on.


Saturday, 02.10. : Take 3 in the forrest.

Your gaze sweeps routinely over the forest floor, your steps are sure on the changing ground. The scent of the forest burns itself deeply into your memory and intoxicates your senses. Here and there, you see familiar faces of the forest dwellers. Quickly, the basket fills up, and then the soup pot on the fire. In the middle of the peaceful silence, you hear only the sound of contented slurping and smacking.


Sunday, 03.10. : Individual departure with provisions in your luggage and happiness in your heart.

Participation is limited to 12 people. The mushroom week is led by Michael Haensch and Felix Schultess, mushroom experts, forest lovers, pyromaniacs, and promoters of convivial communal dining.


Cost: €1,650 per person incl. MwSt, Overnight stay in one of the luxurious courtyard apartments, as well as all forest excursions and communal meals as per the program. All other meals are self-catering. Fully equipped kitchens are available in the apartments for this purpose.
